Savor the Season: Fall Comfort, Packed with Protein
This hearty soup not only provides a good dose of protein but also offers plenty of fiber, vitamins, and minerals, making it an excellent choice for aging adults who wish to maintain their health.
Ingredients:
1 cup dried green or brown lentils
4 cups low-sodium vegetable broth
2 cups water
1 onion, chopped
2 carrots, peeled and diced
2 celery stalks, diced
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Salt and pepper to taste
1 cup chopped spinach or kale (optional)
1 cup diced cooked chicken breast or tofu (optional, for added protein)
Instructions:
In a large pot, combine lentils, vegetable broth, water, onion, carrots, celery, garlic, thyme, rosemary, bay leaf, salt, and pepper.
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 30-35 minutes, or until the lentils and vegetables are tender.
If using, stir in the chopped spinach or kale and cooked chicken breast or tofu. Simmer for an additional 5-10 minutes until the greens are wilted and the protein is heated through.
Remove the bay leaf before serving.
