Savor the Season: Fall Comfort, Packed with Protein

This hearty soup not only provides a good dose of protein but also offers plenty of fiber, vitamins, and minerals, making it an excellent choice for aging adults who wish to maintain their health.

Ingredients:

  • 1 cup dried green or brown lentils

  • 4 cups low-sodium vegetable broth

  • 2 cups water

  • 1 onion, chopped

  • 2 carrots, peeled and diced

  • 2 celery stalks, diced

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 bay leaf

  • Salt and pepper to taste

  • 1 cup chopped spinach or kale (optional)

  • 1 cup diced cooked chicken breast or tofu (optional, for added protein)

Instructions:

  1. In a large pot, combine lentils, vegetable broth, water, onion, carrots, celery, garlic, thyme, rosemary, bay leaf, salt, and pepper.

  2. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 30-35 minutes, or until the lentils and vegetables are tender.

  3. If using, stir in the chopped spinach or kale and cooked chicken breast or tofu. Simmer for an additional 5-10 minutes until the greens are wilted and the protein is heated through.

  4. Remove the bay leaf before serving.
